fishalicious.

i love to cook. i love to eat. my waistline loves to expand. it's a vicious cycle. fortunately, there are lots of tasty recipes out there that are figure friendly. unfortunately, many of these recipes are not designed for one mouth households like mine. gerty doesn't count because she doesn't get people food. her gas is bad enough as is. rather than cooking big batches of food and eating the same thing all week long, i like to make single serving dishes to mix things up a bit. the only exception is soup. i like to make big batches of soup and freeze half. but i digress...

my favorite meal to make on busy weeknights is tilapia or salmon. no recipe is required and it is pretty fool proof. grab a pan. douse it with pam (i like the grilling variety because it doesn't burn). sprinkle the tilapia with sea salt, garlic powder and black pepper. cook over medium/medium-high heat for about 4 minutes. while it's cooking, sprinkle the other side with sea salt, garlic powder and black pepper. flip that bad boy over and cook him for an additional 2 minutes or so. right before you think he's done, squeeze some fresh lemon juice on him. if you want to get fancy, deglaze the pan with a little white wine and poor it over the fish for a little winey sauciness.


i like to pair roasted vegetables with my fish. last night's pairing was carrots roasted in olive oil, dill, salt and pepper. simple and tasty. this recipe is by no means ground-breaking, but it takes less than 15 minutes to make from start to finish. AND it's only two weight watchers points. i loves me a low point meal.
